Easy Apple Cake

This German apple cake recipe is not only quick and easy to prepare, the apple pie is in fact very delicious as well. 

Apple cakes are just so yummy and the combination of a freshly baked dough with the right kind ofapple can sent anyone for at least a short time into heaven on earth :-)! Don't we all need this from time to time? One of the reasons why this cake is so easy and quick to prepare is that most of the ingredients are are just measured in cups and it doesn't really make a big difference if your cup is 200 ml /  6.7 oz  or 250 ml / 8.4 oz. as long as one uses the same cup for all the ingredients.

Ingredients
for the
Apple Cake Recipe

  • 1.5 cups wheat flour
  • 1 cup sugar
  • 1/2 cup sparkling springwater
  • 1/2 cup oil
  • 2 eggs
  • 10 gram / 0.7 oz baking powder
  • 1 tbsp. vanilla sugar / or vanilla essence
  • Oil to grease the baking tray
  • 1 kg / 2 lbs. sweet and sour crisp apples (I used pink crips)
  • 2 tbsp. ground almonds
  • 1 leveled tsp. cinnamon
  • Icing sugar to sprinkle over the finished cake



Directions

  • Wash apples, quarter them, remove cores, cut into slices and set aside for the time being
  • Add all other ingredients except the greasing oil and icing sugar to a food processor and blend them to a smooth batter
  • Lightly grease a 30cm / 12 inch baking tray / mold and evenly pore the cake batter on to the tray
  • Cover the surface tightly with the apple slices, taking care not to push them down just gently into the dough
  • Preheat oven to 180 degrees Celsius / 356 Fahrenheit, place baking tray in the middle rack of the oven and bake for 50 to 55 minutes until the cake is golden brown on the surface
  • Remove from the oven and let it cool down for t least 15 minutes before you  sprinkle the cake generously with  icing sugar
  • Serve as is or with a dash of fresh whipped cream

The cake tastes best fresh but can still be enjoyed at the following day.

Note: This cake might as well be prepared with apricots, prunes, cherries, peaches or fruit of your choice.
