This sweet and hot chicken casserole recipe is a wonderfully aromatic slow cooked / baked dish that is low in fat.  Combined with steamed broccoli, garlic, onions, orange juice, red chilies, soy sauce

and spices it is definitely worth a try. This recipe with it's spices and the soy sauce has definitely an asian touch. The beauty and the tastiness of the finished dish is apart from the ingredients due to the slow cooking / baking process that is blending the flavors harmonious together and is as well a treat for the eyes.

  • 1 tbs. of olive oil
  • 1 tbs. potato flower
  • 1 tbs. water
  • 1/4 cup brown sugar
  • 1/2 cup soy sauce
  • 1/4 cup white wine vinegar
  • 1 medium sized onion, cut into eight pieces
  • 400 gram of broccoli, chopped into roses
  • 3 cloves of garlic, chopped fine
  • 2.5 cm / 1 inch piece of fresh minced ginger
  • 1/4 teaspoon ground black pepper
  • 1 tsp. Portuguese chicken spice, or other chicken masala you got at hand
  • 1 tsp. dried origano
  • 3 chicken breasts, skinned, deboned and chopped into bite sized pieces



Directions

  • Place a frying pan with a non stick surface on the stove
  • Switch on hotplate to medium setting
  • Add olive oil, potato flower, chicken spice, sugar, water, soy sauce, vinegar, origanum, garlic, ginger, chillies and pepper to the pan and let heat up. Once it starts to boil, lower the heat and  let the sauce simmer gently for 5 minutes
  • Stir regularly till the sauce  begins to thicken
  • Take the pan of the stove
  • Add chicken and onions to the casserole dish and cover with the sauce from the pan.
  • Place the open casserole dish in the preheated oven (220 degrees Celsius / 425 Fahrenheit) and let it bake for 30 minutes
  • Now take the dish out of the oven, close the oven door quickly again to avoid loosing to much heat from the oven.
  • Add the broccoli to the Chicken and sauce and carefully mix all ingredients together
  • Place the dish again in the oven and bake for another 30 minutes.
  • Keep an eye on the ingredients at the surface of the casserole. Once they are golden brown, cover them with tin foil to prevent them from burning.
  • While you are waiting for the dish to be fully cooked prepare pasta, potatoes or rice in another pot so they will be ready to be served as well when the chicken is done.
  • Once the time is up, switch of the oven and serve chicken and broccoli casserole hot with pasta, rice or potatoes
