but their meat has only become popular around the world 20 or 30 years ago. In South Africa we are blessed with many ostrich farms which is one of the reasons why we enjoy ostrich meat on a regular basis. The other however is the fact that the red meat of these big birds is very low in fat and calories and rich in iron and protein, making it a more balanced and healthier choice than pork or beef meat.

Ingredients for this Ostrich Steak Recipe
2 ostrich steaks of 200 grams / 7 oz. each
Olive oil
For the spice mix use the following
2 cloves of garlic
1 tsp. plain paprika powder
1 tsp. salt
1/2 tsp. freshly ground black pepper
1/2 tsp cayenne pepper
1 tsp, crushed coriander seeds
(Alternatively use your favorite steak spice)
Directions
Mix all the ingredients for the spice mix and keep them aside
Open sealed vacuum bag with steaks and let them air for 10 minutes
Coat steaks on both sides with olive oil
Place a heavy bottomed large skillet on high heat on the stove
Once the pan is hot add the steaks and seal them on all sides 20 to 30 seconds each to keep the juices inside
Take steaks out of the pan and sprinkle them generously on all sides with the spice mix
Add ostrich steaks back into the skillet and fry.
Depending on the thickness of the meat and the heat of your pan, barbecue or braai grid, fry
steaks for 2 minutes on each side for a "Rare", 2.5 to 3 minutes for a "Medium Rare" and 3.5 to 4 minutes for a "Medium" finish.
The frying times are guidelines and are really depending on your cuts and the heat of your pan or grill. So it might be a good idea to try one steak first and have a look at the result. Than adjust your frying times accordingly.
