This mediterranean watermelon salad is ideally suited for hot summer days and can serve as a main course or

dessert. It is brimming with flavour, healthy, quick to prepare and oh so refreshing.

Ingredients
for
Mediterranean Watermelon Salad

  • 1/2 Watermelon, cut into bite sized cubes
  • 1 cup mixed olives, (pitted if possible)
  • 1 cup blackberries
  • 250 gram / 8.8 oz. plain feta   cheese, diced
  • 1 clove of garlic, finely chopped
  • 1/2 bunch fresh parsley, roughly chopped
  • 1/2 bunch fresh mint, roughly chopped
  • 1 red onion, finely chopped
  • 2 tbsp. extra virgin olive oil
  • 1 tbsp. white balsamic vinegar, (optional - use a good fruit vinegar instead)
  • Salt and pepper to taste



Directions

  • Place all ingredients in a large bowl, mix carefully and place the salad for at least 15 minutes in the fridge to cool down
  • Serve in soup plates or dessert bowls
