Ingredients for Mediterranean Watermelon Salad
1/2 Watermelon, cut into bite sized cubes
1 cup mixed olives, (pitted if possible)
1 cup blackberries
250 gram / 8.8 oz. plain feta cheese, diced
1 clove of garlic, finely chopped
1/2 bunch fresh parsley, roughly chopped
1/2 bunch fresh mint, roughly chopped
1 red onion, finely chopped
2 tbsp. extra virgin olive oil
1 tbsp. white balsamic vinegar, (optional - use a good fruit vinegar instead)
Salt and pepper to taste
Directions
Place all ingredients in a large bowl, mix carefully and place the salad for at least 15 minutes in the fridge to cool down
