Hearty Pea Soup

This hearty pea soup is prepared with Kassler chops, smoked sausages (Mettenden), legumes and other healthy 

and satisfying ingredients. I have fond memories to my childhood when we all lived in my Grandparents home and enjoyed mostly traditional German meals. Casseroles and One Pot dishes where quite often on the menu and pea soup with some smoked gammon, bacon or sausages was definitely one of the meals I learned to love. This recipe is dedicated to my Granny.

Serves 4




Hearty Pea Soup Ingredients

  • 650 gram / 23 oz defrosted green peas
  • 3 Tbsp of extra virgin olive oil
  • 3 Kassler chops, with bone
  • 3 Mettenden or smoked sausages of your choice
  • 1 large carrot, peeled and cut into thin disks
  • 1/2 cup of red lentils
  • 3 potatoes, diced
  • 3 cloves of garlic, peeled and crushed
  • 1 large onion, chopped fine
  • 1 rib of celery, chopped
  • 100 gram / 3.5 oz of green beans, ends chopped of
  • 1 bay leaf
  • 2 cups of vegetable broth
  • 4 cups of water
  • 1 Tbsp dried marjoram
  • 1 tsp dried marjoram
  • 1 tsp cumin seeds



Directions

  • Place large pot on the stove and switch hot plate to medium heat
  • Add onions, cover with lid and braise them for about 8 minutes or till they are beginning to change color
  • Add garlic, bay leaf, cumin seeds, carrots, celery, green beans and potatoes, cover again with lid and braise for about 3 minutes
  • Stir contents of pot well and add vegetable broth and water
  • Stir pot again before you add peas and lentils, Cover pot with lid and let the water heat up
  • When the soup is beginning to boil, reduce the heat to low and let it gently simmer for 30 minutes
  • When the time is up add the Kassler chops, the tablespoon of Marjoram and the Mettenden which you should get at any good German butcher, cover pot with lid and simmer the soup for another 30 minutes
  • Remove Kassler chops and smoked sausages from pot and cut into bite sized pieces and keep aside for a few minutes
  • Using a ladle carefully take half the soup out of the pot and add it to a food processor, blend the ingredients for about15 seconds and add the soup together with the kassler chops and mettenden back to the pot
  • Let soup get hot again, once it begins to simmer again, switch of the heat
  • Sample some soup and if desired add salt and pepper to taste
  • Ladle some hearty pea soup into a bowl, garnish with a little marjoram and serve soup hot with buttered slices of fresh rye bread or bread of your choice
