Ingredients for Dark Jewel
2 cup beetroot, boiled and chopped, (optional - replace with bottled beetroot from the grocery store instead to save time
1 cup beetroot, salt fermented (4% of vegetable weight)
4 celery sticks, chopped
2 tablespoons wild plum (Carissa macrocarpa) vinegar pickle - (optional - use commercially available pickle of your choice instead)
4 tablespoons thick yoghurt
Directions
Boil beetroot for 30 minutes and let cool down for 5 minutes
Chopp beetroots
Add all ingredients to a large bowl
Stir them well
Let salad rest covered with a cloth for 10 minutes
Serve as side dish to a savory main dish of your choice
