Dark Jewel Salad

This dark jewel salad is a quick and healthy dish with a twist. A great treat for all friends of vegan food

Preparation time: 15 minutes 
Cooking time: at least 30 minutes
Resting time: 15 minutes
Total time needed: at least 60 minutes
Grade of Difficulty: standard


Serves 4

Dark Jewel 

  • 2 cup beetroot, boiled and chopped, (optional - replace with bottled beetroot from the grocery store instead to save time 
  • 1 cup beetroot, salt fermented (4% of vegetable weight)
  • 4 celery sticks, chopped
  • 2 tablespoons wild plum (Carissa macrocarpa) vinegar pickle - (optional - use commercially available pickle of your choice instead)
  • 4 tablespoons thick yoghurt


  • Boil beetroot for 30 minutes and let cool down for 5 minutes
  • Chopp beetroots
  • Add all ingredients to a large bowl
  • Stir them well
  • Let salad rest covered with a cloth for 10 minutes
  • Serve as side dish to a savory main dish of your choice
