Smoked Tofu Salad

Smoked tofu salad is a vegan delicacy brimming with interesting flavors and health benefits. The dish is quick and easy to make and can serve as side dish as well as 

a main course. Apart from the tofu it basically consists of pineapple, broccoli, sweet corn, mushrooms, a little extra virgin olive oil and a yogurt based french salad dressing.

Preparation time: 15 minutes 
Cooking time: at least 5 minutes
Resting time: 0 minutes
Total time needed: at least 20 minutes
Grade of Difficulty: easy

This recipe was inspired by a recipe found in the book "Classic Vegetarian Cuisine" that was edited by Rosemary Moon. I adjusted the recipe to serve our personal taste and appetite :-).

Smoked Tofu Salad

  • 250 gram / 8.8 oz broccoli florets
  • 250 gram / 8.8 oz mushrooms, sliced
  • 3 tbsp. extra virgin olive oil
  • 250 gram / 8.8 oz pineapple, diced
  • 250 gram / 8.8 oz smoked tofu
  • 250 gram / 8.8 oz sweet corn kernels
  • Homemade French salad dressing,  You can find the recipe here


  • Add oil to a large skillet and switch stove to medium hot heat
  • Add broccoli and mushrooms, lightly sprinkle them with salt and pepper, cover with lid and saute for 5 to 8 minutes, stirring regularly
  • Remove skillet from heat and let mushrooms and broccoli cool down for 5 minutes
  • While mushrooms and broccoli are cooling down add french salad dressing, 3/4 of the smoked tofu and all other ingredients to a large bowl and mix them well
  • Now add the broccoli, mushrooms and the remaining oil and liquids from the skillet to the bowl and mix all ingredients one last time
  • Add remaining tofu pieces to the top of the salad and serve immediately with potatoes or slices of freshly baked white bread
