Sauce Andalouse

Sauce Andalouse originated in Belgium and has contrary to many peoples believe nothing to do with the Spanish region of Andalusia. The aromatic sauce is used to accompany French fries 

but tastes as well great with fried or poached fish and grilled / barbecued meat and sausages. It can be prepared in just a minutes and there are many variations possible that can be implemented to suit your personal taste.

Resting time: 60 minutes
Total time needed: at least 1 H 5 minutes
Grade of Difficulty: standard

Sauce Andalouse

  • 100 gram / 3.5 oz Mayonaise (use homemade if you can, it just tastes better)
  • 2 tbs. tomato paste, (optional, use tomato sauce instead)
  • 2 tbs. red balsamic vinegar
  • 1 tsp. lemon juice
  • 1 tsp. apricot jam, (optional, use brown sugar instead)
  • 1 shot Worcester sauce
  • 1 tsp. cayenne chili, finely chopped, (optional use Shito - fried pepper sauce instead for additional unique flavors )
  • Salt and pepper to taste
  • 2 cloves of garlic, chopped fine (optional) 


  • Add all ingredients to a mixing bowl and whisk them thoroughly with an eggbeater
  • Cover with a towel or lid and let the sauce rest for at least one hour in the fridge

Adapt the recipe to suit your personal taste and enjoy.
