Potato Leek Soup
with
Debrecziner Sausages

This potato leek soup recipe is easy to prepare and packed with tasty ingredients like garlic chives, sweet potato, fresh cayenne chilli, buttermilk, origanum, cumin seeds and Debrecziner sausages. 

Smoked sausages are an excellent addition to hearty soups and Debrecziners suited this soup perfectly. Although they originated in Hungary, Debrecziner sausages are as well very popular in Austria and many parts of Germany. This soup is greatly appreciated on a cold autumn or winter evening and can of course be enjoyed at any festive occasion.

Ingredients

Potato Leek Soup

Ingredients for potato leek soup with Debrecziner Sausages
  • 1 kg / 2.2 lbs. potatoes, chopped into small cubes
  • 3 tbsp extra virgin olive oil
  • 1 sweet potato (about 250 gram / 1/2 lbs), chopped into small cubes
  • 5 Debrecziner sausages, cut into small slices (optional - use another kind of smoked sausage if you can't get hold of Debresciners)
  • 4 leeks, chopped into thin rings and washed to remove any sand
  • 3 spring onions, cut into thin slices
  • 1 small cayenne chilli, chopped fine (optional)
  • 1 cup of garlic chives, chopped
  • 3 cloves of garlic, chopped fine
  • 5 cups of beef stock
  • 150 ml / 5 oz of buttermilk
  • 1 tbsp dried oregano
  • 1 tsp cumin seeds
  • Salt and pepper to taste
  • Plain paprika powder as garnish (optional)



Instructions

  • Heat up the oil in a large pot and braise the potatoes, sweet potatoes, leeks, chilli, garlic and spring onions in it for about 5 minutes
  • Add the salt, pepper, cumin seeds and beef stock, cover with lid and let the soup gently simmer for 25 minutes. Reduce the heat to small if necessary
  • Take the soup of the stove and blend it in a food processor for about 20 to 30 seconds into a smooth soup with a thickish consistency
  • Add back to the pot and heat soup up again
  • Add buttermilk, chives, oregano and the sausage pieces, when the soup begins to boil again, reduce the heat, cover with lid and let soup gently simmer for another 10 minutes
  • Sample the soup and if desired adjust taste with salt and pepper
  • Ladle hot soup into a bowl, garnish with a little paprika powder and serve with buttered slices of fresh bread

Optional - If you want add some soy sauce of Maggi all purpose seasoning to your bowl of soup.
