Pork Chops in Prune Sauce

Pork chops in prune sauce is a dish that was inspired by a recipe my mother used to cook for us and it combines savory spices with the fruity sweetness of dried prunes.

Pork chops are a favorite in many parts of the world. They can be prepared in countless different ways and this recipe is one of my preferred ones.

Ingredients
for
Pork Chops in Prune Sauce

  • 700 gram / 1.5 pounds pork neck chops (optional: use other pork chops of your choice)
  • 2 tbs. extra virgin olive oil
  • 2 medium sized onions, roughly chopped
  • 3 cloves of garlic, chopped fine
  • 200 gram / 7 oz. dried prunes, pips removed
  • 1/2 tsp. red cayenne chilli powder, or to taste
  • 500 ml meat stock
  • Salt and pepper to taste 



Directions

  • Spice pork chops on all sides with salt and pepper
  • Heat oil in a large pan and fry chops on both sides for a few minutes until they are beginning to turn brown
  • Add onions, prunes and garlic and fry them for another 5 minutes, stirring them a few times during this time
  • Add chilli powder, warmed up stock and 1 cup of water,cover with lid
  • Once the sauce begins to come to the boil, reduce the heat to low and simmer for 40 minutes
  • Now remove the pork chops and using a potato masher, carefully mash the prunes and onions to thicken the sauce
  • Add the meat back to the pan, add salt and pepper to taste ,cover with lid and let everything simmer for another 5 minutes
  • Take of the heat and serve hot either with boiled potatoes or pasta of your choice
