Mamas Meatballs

(Frikadellen)

I always loved mamas meatballs. They are simply delicious and taste great fresh and hot but are as well wonderful

once they have cooled down and stored in the fridge. We had them at birthday parties, picnics, as travel food while on the road to holiday destinations and many other occasions. In my fond memories of my childhood days and my grannies and mums great cooking I ll publish this recipe. The ingredients below that I mentioned as optional additions are just my personal choice of variations. The Frikadellen as we call them in Germany taste good with and without them.

Ingredients
for
Mamas Meatballs

  • 400 gram beef or pork mince
  • Vegetable oil or some lard for frying
  • 1 medium sized onion; chopped finely
  • 1 large clove of garlic; chopped
  • ½ teaspoon paprika powder
  • 1 tsp. salt
  • ½ a cayenne chili pepper, chopped finely, (optional)
  • 5 dried curry leaves, crumbled into small pieces; (optional)
  • 1 leaf of fresh basil chopped finely; (optional)
  • 1 raw egg
  • 1 slice of rye bread the size of a roll, (or a roll if you prefer)
  • 1 heaped tsp. medium hot mustard
  • Black pepper freshly ground to taste



Directions

  • Soak the bred in a bowl of water for at least 5 minutes
  • Pour away the water and squeeze as much water out of the bred as possible and place it together with all the other ingredients in a bowl
  • Mix everything together well and form 8 to 10 flattish meatballs from it
  • Place a pan with the oil on the stove plate with medium heat and once the oil is hot use a spatula to add the meatballs in the pan.
  • Fry them for 8 to 10 minutes on the one side; (to prevent them from getting stuck to the bottom of your 
  • pan, shake the pan a few times back and force a minute after you added them to the pan until you see them move, than cover them partially with a lid until its time to turn them around
  • Check them after 8 minutes and if they are nicely browned on the one side carefully turn them all around on the other side, cover them again partially with the lid and let them fry for another 7 minutes 

Serve them hot together with homemade potato salad or french fries and green salad
