German Style 
Meat Salad (Fleischsalat)

German style meat salad (Fleischsalat) is consistently amongst the most popular gourmet salads sold in Germany. Fleischsalat is usually made with a few 

basic ingredients like "Fleischwurst 

(polony or pork sausage), gherkins, mayonnaise, spices and herbs". It is served as a great accompaniment to fresh rolls / buns or freshly baked bread. Like in many areas of life when it comes to meat salad the rule that "The better the ingredients the tastier the final product will be" is nearly always true. I love it because it is easy and quick to make and delicious for breakfast, during festivities with finger food or if served while outdoors on a picnic.

The recipe I will share with you here will take you less than 15 minutes to prepare and the secret apart from using a good Fleischwurst, Jagdwurst or Bierwurst, tasty gherkins is the spiced homemade mayonnaise. It adds wonderful flavors to the sausage and gherkins and makes this Fleischsalat really a favorite of mine.

Ingredients for Meat Salad

  • Equal parts of Fleischwurst, Gherkins and Mayonnaise
  • I used 200 grams / 7 oz of a good Fleischwurst from our local German butcher
  • 200 grams / 7 oz of sweet and sour gherkins and
  • 200 grams / 7 oz of spiced homemade mayonnaise

The great thing about homemade mayonnaise is the fact that you can add all your spices to it when you prepare it and that you can make it without any chemical preservatives that you usually will find in products that you purchase in the stores.




Directions

  • Cut the Fleischwurst into thin pieces about 5 mm / 0.2 inch wide and 5 cm / 2 inch long
  • Cut the gherkins to the same size as the Wurst pieces
  • Then squeeze as much of the liquid out of the gherkins as you can. Otherwise the meat salad will become to wet and soggy once it has rested for a while
  • in a bowl or jar mix mayonnaise, Fleischwurst and gherkins together and cover with a lid. 

Place in the fridge and serve with fresh rolls or bread
