Mamas Cucumber Soup

Mamas cucumber soup is not only very delicious it is as well a cooking recipe that is quick and easy to prepare and a healthy vegetarian dish that can be used as a starter as well as a main dish if accompanied by some slices of fresh bread of your choice.  

When people talk about cucumbers they nearly exclusively visualize them as being part of a freshly made salad and this is only natural because they really fit in beautifully with many colorful and tasty salad recipes. However they work as well as the main ingredient in soup recipes.

I must admit that I was as well a little skeptical when my mum made it for the first time but after the first spoonful of it I was hooked and over the years many friends and friends of friends as well.

It is really so quick and easy to prepare and is so tasty that it makes both a great meal on any given day as well as a colourful addition to the menu on special occasions with family and friends.

Serves 3 to 4




Ingredients
for
Mamas Cucumber Soup

  • 2 large cucumbers, sliced
  • 1 tsp. butter
  • 3 cloves of garlic, chopped fine
  • 1 sliced jalapeno pepper, (optional)
  • 1 sliced bishops crown pepper (optional)
  • 2 cups vegetable stock
  • 1 cup fresh cream
  • 1 tbs. fresh or dried dill leaves, chopped fine
  • Salt to taste

Directions

  • Place a pot on the stove and melt the butter on medium heat
  • Fry the cucumber slices and garlic for a few minutes
  • Add the vegetable stock and half of the pepper rings, cover with lid and simmer for 15 minutes
  • Blend the soup in a food processor or just mash it with a potato masher in the pot
  • Add fresh cream and Dill, cover again and let the soup simmer for another 5 minutes
  • If needed add salt to taste and serve hot
