Baked Herb Potatoes

This baked herb potatoes recipe takes very little time to prepare, is easy and most of all really tasty. Baked potatoes are a favorite for many people and I love them too. What makes this recipe stand out for me is the combination of the potatoes with extra virgin olive oil and a mix of fresh herbs that get attached to them during the baking process.

Add some garlic salt and some freshly ground pepper and you have an attractive looking great tasting dish for any occasion. We made the potatoes this time with some mushroom cream sauce but they are a great accompaniment for many kinds of sauces and dips. 

So when you want to surprise your family or have guests over the next time add those baked potatoes to your food list and rake in the compliments.

Ingredients
For
Baked Herb Potatoes

  • 8 medium sized potatoes, cut in half lengthwise
  • A few tbsp. extra virgin olive oil
  • Fresh garden herbs, I used oregano, thyme, savory, basil and rosemarie but feel free to use your own favorite herbs
  • garlic salt (optional use sea salt or Himalaya rock salt instead
  • Black pepper, freshly ground



Directions

  • Place baking paper into a baking tray
  • Place the halved potatoes with the flat site facing upwards on the baking paper
  • Brush the flat surface of each potato with olive oil
  • Place a sprig or some leaves on each flat surface of the potatoes
  • Sprinkle with garlic salt and pepper
  • Carefully turn around each potato and place the with the flat side down onto the baking paper, making sure it covers the herb underneath it
  • Brush the rounded sides of each potato with olive oil and sprinkle with garlic salt and pepper
  • Preheat the oven to 200 degrees Celsius / 392 degrees Fahrenheit
  • Place baking tray with potatoes in the middle shelf of the oven and bake for about 40 minutes with bottom and top heat, or till the potatoes have turned golden brown
  • Take out of the oven and enjoy hot or cold
