Healthy Green Soup


This green soup is full of flavors, fibers, vitamins and many other health benefits. The combination of spinach, kale, broccoli, peas, beans, garlic, fresh garden herbs and fragrant spices makes

this soup both a pleasant sight and a great experience for the taste buds. I had a little trouble to come up for a suitable name for this soup. As none of the vegetables can be regarded as the main ingredient as can be found in many traditional soup recipes like pea soup, cucumber soup, bean soup or kale soup none of those names would have done this soup recipe justice. So I believe that "Healthy Green Soup" will be the right one to describe this lovely soup.

Ingredients
for
Healthy Green Soup

  • 2 tbs. olive oil
  • 200 grams / 7 oz curly kale, roughly chopped
  • 200 grams / 7 oz fresh garden peas
  • 200 grams / 7 oz leeks, washed and cut into rings
  • 200 grams / 7 oz cucumber, roughly chopped
  • 200 grams / 7 oz green beans, roughly chopped
  • 200 grams / 7 oz of broccoli, cut into roses
  • 100 grams / 3.5 oz of mixed fresh garden greens (spinach, mustard leaves and rocket
  • 1 stick of celery, chopped fine
  • 1 bunch of fresh garden herbs, (basil, thyme, origanum, rosemary, parsley)
  • 5 cloves of garlic
  • 1 green jalapeno pepper, chopped fine
  • 4 cups of vegetable stock
  • 1 small onion. chopped fine
  • 1 bay leaf
  • 1/2 tsp. cumin / jeera
  • 1 tsp. black mustard seeds
  • Salt and pepper to taste
  • 1 handful of walnuts for decoration



Directions

  • In a large pan braise onion and leeks for about 5 minutes
  • Add garlic, beans, jalapeno pepper and bay leaf, cover with lid and cook for another 5 minutes
  • In the meantime place large the stock in a big pot and bring it to the boil
  • Add braised vegetables and all the uncooked vegetables to the pot, cover with the lid and bring all to the boil. Lower the heat and gently simmer all for 40 minutes, stirring the soup a few times
  • Next add the cumin, herbs, mustard seeds and salt and pepper, cover again, switch of the heat and let the soup stand for 5 more minutes on the stove
  • Now place the soup in a food processor and blend well till you get a smooth and thick soup
  • Return it to the pot. 
  • Garnish with some walnuts
  • Serve hot with some fresh bread
