This green gnocchi is quick and easy to prepare and oh so delicious. The gnocchi get their color from a delicious Basil and sunflower seed pesto which ads herbal and nutty tastes to the dish.

Ingredients for Simple Green Gnocchi
500g Gnocci
2 medium potatoes diced in 1 cm / 0.39 inch cubes
250g / 8.81 oz. green beans trimmed at the ends
For the PESTO
40 large basil leaves
2 tablespoons sunflower seeds
6 tablespoons mature white cheddar, grated
4 tablespoons olive oil
3 cloves garlic
1 teaspoon white wine vinegar
salt and pepper to taste
Directions
Blend pesto ingredients in a bowl with a stick blender till fine, and then add salt and pepper to taste.
Bring a large pot with about 3.5 Liters / 0.92 gallon of water to the boil.
Add half a teaspoon salt and a dash of olive oil.
Add the beans and diced potato.
Cook for 2 minutes and then add the gnocchi.
Test the pasta frequently till it is at the Al dente stage.
Then pour off all the water except a little caught in the pot, about 3 tablespoons.
Take the pot to the table and spoon in the pesto, and then put some of the pasta in the pesto bowl and stir it to mop up the rest of the pesto and return it to the pot.
Stir well till the pasta turns pale green and serve.
