Ingredients for Colorful Chicken Salad
2 chicken breast fillets, skinned and cut into strips
2 tbs. extra virgin olive oil
Salt and pepper to taste
1 tsp. plain paprika powder
1/2 tsp. cumin powder
2 cups filled with freshly chopped swiss chard, rocket and lettuce
1/2 a red onion, diced
8 strawberries, halved
1/2 ripe avocado, cubed
1/2 cup of Feta cheese, cubed
1/2 cup of raw cashew nuts
6 small red radish, halved
2 stalks of celery, chopped
1/2 cup of soy bean sprouts
Some orange and lemon zest
For the salad dressing
1 tsp. hot mustard
2 tbs. smooth peanut butter
1 tbs. olive oil
Juice from 1 orange
2 tbs. water
Directions
Chop all the salad ingredients
Place all salad ingredients except the chicken in a large bowl
Spice chicken with salt, pepper, paprika powder and cumin
Place a pan on the stove add 2 tbs. of olive oil and turn stove on to medium heat
Add chicken pieces, cover with lid and braise them for 10 minutes on all sides till they changed color and are beginning to brown
Take of the stove and put chicken aside to cool down
Add ingredients for salad dressing in a food processor or a jar with a lid and blend them well
Add chicken pieces to the salad bowl
Sprinkle salad dressing over salad and mix all ingredients well
Let the salad rest for at least 5 minutes before you serve it
