Colorful Chicken Salad

Ingredients
for
Colorful Chicken Salad

  • 2 chicken breast fillets, skinned and cut into strips
  • 2 tbs. extra virgin olive oil
  • Salt and pepper to taste
  • 1 tsp. plain paprika powder
  • 1/2 tsp. cumin powder
  • 2 cups filled with freshly chopped swiss chard, rocket and lettuce
  • 1/2 a red onion, diced
  • 8 strawberries, halved
  • 1/2 ripe avocado, cubed
  • 1/2 cup of Feta cheese, cubed
  • 1/2 cup of raw cashew nuts
  • 6 small red radish, halved
  • 2 stalks of celery, chopped
  • 1/2 cup of soy bean sprouts
  • Some orange and lemon zest

For the salad dressing

  • 1 tsp. hot mustard
  • 2 tbs. smooth peanut butter
  • 1 tbs. olive oil
  • Juice from 1 orange
  • 2 tbs. water



Directions

  • Chop all the salad ingredients
  • Place all salad ingredients except the chicken in a large bowl
  • Spice chicken with salt, pepper, paprika powder and cumin
  • Place a pan on the stove add 2 tbs. of olive oil and turn stove on to medium heat
  • Add chicken pieces, cover with lid and braise them for 10 minutes on all sides till they changed color and are beginning to brown
  • Take of the stove and put chicken aside to cool down
  • Add ingredients for salad dressing in a food processor or a jar with a lid and blend them well
  • Add chicken pieces to the salad bowl
  • Sprinkle salad dressing over salad and mix all ingredients well
  • Let the salad rest for at least 5 minutes before you serve it
