Brinjal Burger with tomatoes and avocado

This brinjal burger with tomatoes, avocados and a yoghurt and herb mayonnaise dressing is a great vegetarian alternative to your 

common beef- and chicken burgers. Apart from its healthy ingredients it is quick and easy to make and brimming with flavors. There are so many tasty condiments that you can add to the brinjals, tomato and avocado that you can create burgers that suit anybodies personal preferences.

Brinjal Burger 

  • 1 fresh Brinjal, cut lengthwise into 1 to 2 cm / 0.4 to 0.8 inch thick slices
  • Olive oil for frying
  • Fresh rolls of your choice
  • 1 Flesh of a ripe avocado, scooped out and meshed
  • 2 ripe tomatoes, sliced
  • fresh lettuce leaves, roughly chopped or torn
  • Red jalapeno pepper, thinly sliced (optional)
  • Red cayenne pepper, thinly sliced (optional)
  • fresh red cayenne pepper chili paste (optional)
  • Some homemade fermented chili sauce (optional)
  • freshly homemade aromatic herb mayonnaise, or a good commercially available one 
  • 1 block of fresh tofu, thinly sliced
  • sesame seeds (optional)
  • linseeds (optional)
  • fresh yoghurt
  • salt
  • pepper
  • paprika


  • Warm up olive oil over medium heat in a pan and add sliced brinjals to it. 
  • Close the lid and fry them for a few minutes on both side till they start changing color.
  • Add sesame and / or linseeds to the pan, close lid and fry brinjals and seeds for a few more minutes. 
  • Take of the heat when brinjal slices have a nice golden brown color.
  • Cut a roll and spread both inside halves with meshed avocado and mayonnaise
  • Sprinkle some fermented chili sauce or chili paste on the mayonnaise and avocado mix (optional)
  • On the bottom half of the roll add tomato slices and lettuce leaves
  • Cover the lettuce with brinjal and some of the fried seeds.
  • Spread some yoghurt on the brinjal (optional) 
  • Add salt, pepper and paprika powder to taste
  • Place a slice or two of tofu on the brinjal (optional)
  • Add some fresh jalapeno or cayenne pepper slices on top.
  • Cover the burger with the top half of the roll and enjoy.

As I mentioned above this Brinjal burger recipe is really quite adaptable. So add other ingredients like for example cucumber slices , bell peppers, fresh coriander / cilantro leaves or onion slices to your burgers to suit your personal taste.

One brinjal is usually enough for about 3 to 4 burgers depending on the size of the rolls.
