common beef- and chicken burgers. Apart from its healthy ingredients it is quick and easy to make and brimming with flavors. There are so many tasty condiments that you can add to the brinjals, tomato and avocado that you can create burgers that suit anybodies personal preferences.

On the bottom half of the roll add tomato slices and lettuce leaves
Cover the lettuce with brinjal and some of the fried seeds.
Spread some yoghurt on the brinjal (optional)
Add salt, pepper and paprika powder to taste
Place a slice or two of tofu on the brinjal (optional)
Add some fresh jalapeno or cayenne pepper slices on top.
Cover the burger with the top half of the roll and enjoy.
As I mentioned above this Brinjal burger recipe is really quite adaptable. So add other ingredients like for example cucumber slices , bell peppers, fresh coriander / cilantro leaves or onion slices to your burgers to suit your personal taste.
One brinjal is usually enough for about 3 to 4 burgers depending on the size of the rolls.
