Wild Winter Sambal 

  • 1 apple
  • 1 onion
  • 1 green cayenne chili, chopped fine
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 tablespoons home made fruit vinegar 
    (see condiments for method) or other vinegar)
  • Dill, and a touch of rosemary
  • 1 small bunch sour sorrel (Oxalis pes-caprae)
  • 5-10 big fresh mustard leaves, chopped


  • Coarsely chop large ingredients
  • Add all to a blender and zip for a few seconds until all is sambal fine (chunks of a few millimetres)

Serve a few spoons with your curry. Super easy, super fresh, compliments curries that need something fresh to cut through the main flavor wonderfully, and super healthy !
