Wild Winter Sambal is a delicious sparky condiment made from
fresh ingredients found in the Cape garden in winter, using weeds and winter
vegetables plus a few common kitchen favorites, and

Ingredients for Wild Winter Sambal
1 apple
1 onion
1 green cayenne chili, chopped fine
2 tablespoons olive oil
Salt and pepper to taste
4 tablespoons home made fruit vinegar or other vinegar of your choice Dill, and a touch of rosemary
1 small bunch sour sorrel (Oxalis pes-caprae)
5-10 big fresh mustard leaves, chopped
Directions
Coarsely chop large ingredients
Add all to a blender and zip for a few seconds until all is sambal fine (chunks of a few millimetres)
Serve a few spoons with your curry. Super easy, super fresh, compliments curries that need something fresh to cut through the main flavor wonderfully, and super healthy !
