Strammer Max is a traditional German dish that is quick and easy to prepare and can be made in many variations. It usually consists of a good slice of bread made from wheat and rye flour, cooked ham or bacon and fried eggs sunny side up. Apart from those basic ingredients there are many other condiments that can be added. Very popular are gherkins, "Senfgurken" / Pickled mustard cucumbers, Tomatoes, 

fried onions, butter, garlic and mustard to name only a few. Although the dish originated in the area around Berlin it is these days popular all over Germany and prepared at home as well as in pubs and Restaurants.

Ingredients
for this
Strammer Max Recipe

  • 4 slices of 60% Rye bread
  • 50 gram / 1.76oz. butter
  • 1 medium sized onion, cut into thin rings
  • 2 cloves of garlic, finely chopped
  • 4 slices of raw bacon
  • 4 eggs
  • 4 small pickled gherkins,sliced
  • A few pieces "mustard cucumbers", sliced
  • Salt, plain paprika powder and pepper to taste
  • A few pinches of dried mixed herbs  



Directions

  • Melt butter in a large skillet / pan
  • Add onion rings, cover with lid and saute for 5 minutes or till they are beginning to brown , stirring them regularly
  • Add garlic and saute for another 2 minutes, stirring regularly
  • Remove onions and garlic from skillet and put aside for the time being
  • Add bacon slices, cover with lid and saute in the remaining butter 4 minutes on both sides or a little longer if you want your bacon more crispy
  • Remove bacon from the pan and place aside for a moment
  • Add eggs to the pan and fry till the egg white has set but the yolks are still liquid.
  • While the eggs are frying toast slices of bread and place them on a plate
  • Cover bread with bacon
  • Place some onion rings, garlic on the bacon and pore a little of the melted butter over it  
  • Place gherkin and mustard cucumber slices on the bacon and onion rings
  • Use a spatula to place one or two eggs on top of the covered bacon
  • Spice with salt, pepper paprika powder and mixed herbs
  • Add more gherkins and or mustard cucumbers as side dishes and enjoy
