Exotic Chicken Soup

This exotic chicken soup is very easy to prepare and tastes amazing. It's a winner for a small private evening as well as for large festivities. Once you got all the ingredients together in a 

large casserole dish the soup can basically be cooked on auto pilot :-). Healthy ingredients like chicken breast fillets, fresh pineapple, mild pickled peppers, onions, garlic and green peas are combines with a homemade tomato sauce based curry sauce, chilli sauce fresh cream and coconut milk and baked in an oven. The result is unique soup that is a treat for your tastebuds.

Ingredients
for 
Exotic Chicken Soup

  • 900 gram / 1.98 lbs chicken breasts, skinned, cut of the bone and chopped into bite sized cubes
  • 3 medium to large onions, diced
  • 1 small tin 400 gram / 14 oz. of green peas
  • 2 cups of fresh pineapple, cut into small cubes (optional use one small tin of pineapple instead)
  • 1 small glass 400 gram / 14 oz. of mild red pickled peppadew
  • 3 cloves of garlic chopped fine
  • 2 cups of chicken stock, heated up
  • 1.5 cups of tomato sauce or a small bottle
  • 1.5 tbs. hot madras curry powder or other hot curry powder of your choice
  • 1 tsp. salt or to taste
  • 1 tbs. sugar
  • 100 ml / 3.4 oz. of good chilli sauce
  • 1/2 cup of coconut milk
  • 1/2 cup of fresh cream
  • Fresh dill leave to garnish (optional)

Directions

  • Add chicken pieces onion and garlic to a large oven proof casserole dish
  • Add salt, sugar and madras curry powder and mix well with the chicken pieces
  • Next pineapple, peppadews and green peas including the juices of the glass and tins to the chicken, stir briefly
  • Add tomato sauce, chilli sauce, fresh cream, coconut milk and chicken stock to the casserole dish, stir all ingredients and place casserole dish on a baking tray on the middle shelf of a preheated oven ("180 degrees Celsius / 356 degrees Fahrenheit") top and bottom heat or 165 degrees Celsius / 329 degrees Fahrenheit in a circulating air oven
  • Leave casserole dish in the oven for 2 hours without disturbing it
  • Then remove from oven

Serve hot with freshly buttered slices of bread
