This broccoli honey chicken recipe is a delicious combination of chicken breast fillets, fresh broccoli, an sweet and sour Asian style marinade and a rich cream based gravy. The dish is easy to
prepare and the ingredients harmonizing perfectly together making it a healthy and aromatic low fat meal for any occasion.

Ingredients for Broccoli Honey Chicken
Marinated chicken pieces
Olive oil for frying
2 chicken breast fillets, skinned and cut into bite sized chunks
500 gram / 17.6 oz of fresh broccoli, cut into roses
For the marinade
1 tsp. finely chopped red cayenne chili pepper
2 tbs. soy sauce
1/4 tsp. pepper
1 tsp. honey (optional use apricot- or strawberry jam instead)
1 tsp. finely chopped ginger
1 tsp. finely chopped garlic
1/2 tsp. salt
2 tbs. starch
1 tbs. bread crumbs
For the Sauce
2 cloves of garlic finely chopped
150 ml / 5 oz. chicken stock (warm)
50 ml / 1.7 oz fresh cream
2 tbs. honey (optional use apricot- or strawberry instead)
1 tbs. linseeds
1 tbs. sesame seeds
2 tsp. origanum
Salt and pepper to taste
Chicken and broccoli with gravy in the pan
Directions
Add all ingredients for the marinade to a bowl and blend them well
Add chicken pieces to the bowl and cover them with the marinade
Cover the bowl with a kitchen towel and let it rest in the fridge for at least 2 hours.
Once the time is up add oil to a deep pan and fry the chicken pieces from all sides till they are golden brown but not completely done
Remove the chicken from the pan, place in a bowl, cover with a towel and put aside
Add a little more oil, the broccoli and garlic to the pan, cover pan with a lid and saute them on medium heat for about 5 minutes, stirring the broccoli once or twice to prevent it from burning
Remove broccoli roses with a slotted spoon, place in a bowl, cover with a kitchen towel and put aside for the moment
Quench heat of the pan with the chicken stock
Add cream, honey and the seeds and stir till the sauce is beginning to boil
Carefully place chicken pieces and broccoli back into the pan, cover with the lid, reduce stove heat to low and let chicken and broccoli heat up again
Once the sauce is beginning to boil again let all gently simmer for 10 minutes
Use a fork to check if broccoli pieces are done
Add salt and pepper to taste, gently mix all ingredients in the pan and serve hot
We enjoyed the dish on a bed of steamed rice that we prepared on another plate of the stove while the broccoli honey chicken was cooking.
