Broccoli Chicken Casserole

This Broccoli chicken casserole is baked in a cheese and cream sauce that is enriched with fresh basil, garlic and diced ripe tomatoes is amazing. Yes it is rich but the lean chicken breast fillets and the broccoli, tomatoes and garlic add some health benefits as well as color to this dish as well. I love chicken recipes as they offer sheer endless possibilities and seem to be popular 

virtually all over the world. One of the aspects that make this chicken recipe special is the use of a little Carolina Reaper chili powder which is to date still the hottest chili in the world. I use it regularly in my recipes and apart from being extremely hot this chili has an amazing fruity and complex taste which is quite distinctive and different from other chilies I used for my recipes. But it is absolutely vital to use it in very small quantities to avoid making the food to spicy. If used correctly it improves many dishes and lifts them to a new level.

Ingredients
for
Broccoli Chicken Casserole

  • 4 chicken breast fillets
  • 3 tbsp. olive oil
  • 500 gram / 17.6 oz. Broccoli, cut into small florets
  • 2 small ripe tomatoes, diced
  • 100 gram / 3.5 oz. cheddar cheese, diced (optional - use Mozzarella or another hard cheese of your choice instead)
  • 100 gram cheese spread
  • 1 cup heavy cream
  • 1 tsp. Salt (or to taste)
  • 1/2 tsp. black pepper, freshly ground (or to taste)
  • 1 steak knife tip Carolina Reaper chili powder (optional)
  • 3 cloves of garlic (or to taste) finely chopped
  • 20 leaves of fresh basil, roughly chopped
  • 1 tbs. oreganum



Directions

  • Add oil to a large skillet and switch stove to medium hot heat
  • Rub chicken breasts with salt and pepper and fry them in the oil on both sides for about 5 minutes or till their are golden brown
  • Use the remaining oil to grease the bottom and sides of the casserole dish
  • Add meat, broccoli and tomatoes to the casserole and keep aside for the time being
  • Pore fresh cream into a small pot and bring to a gentle boil
  • Once it is boiling add the cheese spread and use a whisk to blend the cheese with the cream
  • Add salt, pepper, Carolina Reaper chili powder, garlic, origanum and basil to the pot and mix well
  • Pore the cream and cheese mix evenly over the chicken breasts, tomatoes and broccoli in the casserole dish
  • Next place the cheddar cubes evenly over the ingredients in the casserole
  • Place in a preheated oven (200 degrees C / 392 F) on the middle shelf and bake for 30 to 35 minutes till all ingredients are done and the cheese has melted and has begun to brown
  • Serve Broccoli chicken casserole hot with salt potatoes or pasta of your choice.
